The fixed oven is the traditional oven that has always been used by Neapolitan pizza makers.
Unlike mobile ovens, they are built directly on site and are built on a fixed masonry base, adapting to the available space.
The fixed ovens are available in various sizes, shapes and coatings depending on the customer’s needs.
The mobile ovens are the new generation of ovens for pizzerias they are always built by hand like the fixed ovens respecting the handcrafted tradition and the experience handed down by the Medaglia family for more than 200 years but they are built on a special reinforced iron base, therefore you have the advantage of being able to move the oven to your liking inside the room, moreover the ovens are built in our headquarters and can be shipped all over the world.
The classic model has a dome and a base with a round shape recalling the classic shape of the authentic Neapolitan oven used in the past by Neapolitan pizza makers.

The “Medaglia” model offers a round dome as per tradition but has more space at the base for storing wood.
On request it is possible to install a gas burner in our handcrafted ovens, leaving the characteristics and functionality of the oven unaltered.

The benefits are many.
Using a gas burner solves all problems related to wood, smoke and soot. There is a reduced internal space occupied by the embers of the wood, leaving the flavor of the pizza unaltered, with savings ranging from 15% to 40%.
